A Beignet kind of Day

Beignets are one of my absolute favourite things – light, fluffy pillows of fried dough smothered in powdered sugar. What’s not to like? I’m no beignet connoisseur, but I’m pretty sure I can tell a good one from a bad one. Today, I had beignets twice – for lunch and dessert-before-dinner – at Thierry. They do beignets for a few weeks in February, and it’s the best few weeks of my life.

Beignets are really quite simple, but strangely enough, a good one is pretty hard to find. I’ve tasted my share of beignets, and they do a pretty great job. While traditionally served with café au lait, I prefer them with Thierry’s lemonade.
