When the temperature dips and the rain starts to fall, there’s nothing I want more than chocolate – rich, bitter, dark chocolate: sipping chocolate at Thierry, cognac truffles at Thomas Haas, or brownies at Chocolate Arts, but what I’m really craving today is a fondant au chocolat from French Made Baking in Vancouver. It’s essentially a molten chocolate cake, but that doesn’t even begin to describe it. I honestly cannot even put into words how much I love it: it’s all the best qualities of devil’s food cake, fudge brownies, and a hot fudge sundae rolled into one. When I find them at the Trout Lake farmers market, alongside caneles and lemon madeleines, my day is made.
