Once again, Beta5 Chocolates has proven that when it comes to ice cream sandwiches, it can do no wrong. Today, we tried strawberry cheesecake: homemade graham cookies sandwiching mild cheesecake ice cream and strawberries.

What I love about Beta5’s ice cream sandwiches is the perfect cookie to ice cream ratio. I feel like the original Klondike bar got the ratio just right – more ice cream than cookie – and Beta5’s sandwiches replicate that, only with much more creative flavour combinations. The thin, crunchy, and mildly sweet cookies don’t compete with the ice cream itself. Other ice cream sandwiches I’ve had the pleasure of trying over the past few months, while yummy, had a little too much cookie.
