Quinoa, along with millet and spelt, is one of my favourite ancient grains, mostly because of its versatility, health properties, and the fact that it is super easy to prepare. Gluten-free bakery, Lemonade, does some wonderful quinoa granola (with coconut flakes, cranberries, and pumpkin seeds), quinoa bread and chocolate chip cookies, but my favourite way to eat quinoa is in a simple salad.
Because of Stella’s allergies, we find ourselves visiting Dr. Maja at Healing Paws quite regularly. On one particular day when we were there around dinnertime, I discovered Café Divano right next door and their fantastic Mediterranean quinoa salad. It’s got a very light dressing, lots of diced bell peppers, cucumber, and tomato, and it’s topped with a sprinkling of feta. And recently, they’ve started serving it in little mason jars – yummy and adorable!
