There are things in life that are so common, so ordinary, that we often take them for granted. Such is the all too familiar chocolate chip cookie. Whenever I walk into a bakery, I tend to pay them little attention, no matter how high the stack, my eyes focusing instead on the kouign amann and croissants, tarts and meringues. Today, however, I stepped into Beaucoup Bakery & Café, and as I waited in line, felt my eyes drawn to the chocolate chip cookies. They were not piled high, only a few plated on the counter, but in their simplicity were irresistible. Thin, chewy, Valrhona chocolate.

This was simplicity at its finest; I could have eaten a dozen.
